Pulled Pork Cups with Buttermilk Biscuit Crust

I can't believe that it has been almost a year since I last posted...what a slacker...  Although, my life has been so busy, it has been on the bottom of my priority list.  I had to post a yummy recipe today, because it really is TO DIE FOR!!!
How can you go wrong when combining two Southern staples: Pulled Pork BBQ and Buttermilk Biscuits?  Add some sharp cheddar cheese and you have culinary perfection!!!

Here is the proof...

What is even better?  They are soooo easy!  I stumbled onto a "Refrigerator Biscuit" recipe that was taken from Paula Deen HERE.  I love Paula Deen!!!

I had seen something on Pinterest a while back that used biscuits for a crust in a muffin tin.  As I was making pulled pork in my crock pot, I thought why not make it into a biscuit crusted cup thingamajiggy?!?  So...I did and added some shredded cheddar cheese on top, baked for 10-12 minutes.  Done like dinner.  Well, it WAS dinner after I added a salad to go with it!

For the Pulled Pork I buy a HUGE pork loin from Costco for $17 or something and cut it into 3 equal pieces.  I buy the Club House pulled pork packet or Victorian Epicure packet (I only use half of the Epicure packet for this recipe).  Let it cook down on HIGH for about 8 hours or so and shred the meat.

I used my jumbo muffin tins for these because they were a dinner portion.  I eyeballed the amount of dough i would need, i would estimate it would be about the size of a golf ball.  I flattened it out and "mushed" it up the sides of the tin that I had sprayed with Pam spray, trying to get it as even as possible.  I measured out a spoonful of barbecue sauce (I used the MOST amazing Forty Creek Whiskey Barbecue Sauce), added about 1/2 cup of pulled pork, then topped with cheddar cheese.

Bake for about 10-12 minutes and let cool for about 2-5 minutes before taking them out of the muffin tins. They were really to die for!!!!
